Ingredients
- 4 pounds large potatoes washed, unpeeled
- 1/4 cup olive oil
- 1 tsp ground dried oregano
- 3 tsp ground cumin
- 2 tsp hot paprika
- 1 tsp ground black pepper
- 2 tsp ground turmeric
- 2 tsp ground coriander
- 1/2 tsp chili powder

Instructions
- Preheat the oven at 350 F; Line and oil 3 baking trays.
- Cut each potato in to wedges. Toss potatoes with all the ingredients in a large bowl.
- Place wedges, in single layers, on the lined trays; roast uncovered turning occasionally, about 40 minutes or until crisp and cooked through.
